Happy Pancake Day! ๐Ÿฅž๐Ÿ“

These fluffy American-style pancakes, with homemade berry compote and alpro yogurt, are my personal fave ๐Ÿ˜š

๐Ÿ‘ฉ๐Ÿผโ€๐ŸณFor the pancakes (makes 8-10)…

300g plain flour
2tbsp sugar
2 heaped tsp baking powder
Pinch of salt
400ml plant milk
1tsp vanilla extract

1. Mix all of the dry and wet ingredients together to form a batter.
2. Allow the batter to rest for 5-10 minutes.
3. Heat a non-stick pan to a medium to high heat and add enough batter for one pancake to the pan.
4. After a couple minutes and once bubbles are forming on the pancake, flip it!
5. Cook for a few more minutes on the other side until golden and serve.
6. Top with the homemade berry compote and a plant-based yogurt.

๐Ÿ“For the berry compote…

150g of frozen mixed berries
2 tbsp of orange juice

1. Add the berries and orange juice to a saucepan on a medium to high heat.
2. Once the berries begin boiling, turn the heat down and mash up the berries with a wooden spoon.
3. Continue to cook for 10 minutes on a low heat.
4. Top your pancakes (any leftover compote will keep fine in the fridge!)
