The mini cupcake saga continues! These are increddddible, definitely give them a go if you’re fancying a sweet bake- you won’t regret it 👩🏼‍🍳
Recipe:
1. Mix 110g flour, 100 sugar, 1/2 tsp baking soda, 1/2 tsp salt.
2. Add 120ml plant milk, 1/2 tsp vanilla extract, 1/2 tsp caramel extract, 40ml olive oil and 1/2 tbsp of apple cider vinegar and mix until you have a smooth batter.
3. Evenly distribute into cupcake cases.
4. Bake at 180°C for 15 mins (if you make bigger ones you’ll need to up the oven time).
5. Allow to fully cool and then pipe on vegan butter cream (50g vegan butter, 1tsp vanilla and 150g icing sugar).
6. Drizzle on salted caramel sauce (heat and whisk 1/2 cup plant cream, 1.5/4 cups brown sugar and 1/2 tbsp cornstarch, then add a pinch of salt and take off the heat).
