💓✨Raspberry & Almond ‘Vego’ White Chocolate Blondies✨💓

The perfect gooey blondies; with raspberries, flaked almonds and vego_chocolate almond bliss white chocolate chunks folded through! Topped with a white chocolate drizzle ofc (I used tescofood free from white choc buttons)🤤

👩🏼‍🍳Recipe:
Preheat oven to 180°C (fan) and line your baking tin.
1. Mix 1 + 1/2 cup of plain flour, 1/2 cup of white sugar, 1/2 cup of light brown sugar, 1/2 tsp salt and 1tsp of baking powder together.
2. Add 1 cup of plant milk, 1tsp of vanilla extract, 150g of melted white chocolate and 2 flax eggs (1 flax egg=1tbsp ground flax+3tbsp water) to the dry ingredients, and mix again.
3. Fold through the broken up vego white choc bar, 50g of flaked almonds and 100g of frozen raspberries.
4. Pour the mixture into the lined baking tin and bake for 35 minutes or until a knife comes out clean.
5. Let cool and then melt 50g of white chocolate to drizzle on top.
6. Enjoy!! 🥰💚

  1. EVERYONE do yourselves a favour and make these 🤤🤤 they’re probably the best thing I’ve ever baked. I didn’t have access to the white choc almond bliss bars, so I substituted the Sainsbury’s free from white choc coconut clusters and added half a teaspoon of almond extract, and they’re TO DIE FOR. I also mixed a little cashew milk with the white chocolate I melted for the drizzle, and instead coated the entire thing with a white chocolate glaze and *chef’s kiss*. Make them for your non vegan folk and see the disbelief on their faces when you tell them it’s vegan. Incredible
