Roasted Chickpeas & Avo Smash on Sourdough Rye Toast 🥑🍋
My favourite way to up the protein content of the classic avo on toast! The chickpeas turn this into a well balanced breakfast/lunch option, which will keep you satisfied for longer🤗
📖Recipe (serves 2):
•4 slices of sourdough toast
•240g drained chickpeas
•2 tsp paprika
•1 tsp garlic powder
•1 tbsp olive oil
•1 large avocado (or 2 smaller)
•1tbsp smooth tahini
•Juice of 1 lemon
•Salt & Pepper
1. Preheat your oven to 200°C (fan).
2. In a baking tray, mix together the chickpeas, olive oil, paprika and garlic powder. Roast these in the oven for 25 mins.
3. Spoon the avocado into a bowl and mash, then mix in the tahini and lemon juice.
4. Evenly distribute the avocado smash and roasted chickpeas onto the sourdough toast, and top with salt & pepper, and chopped fresh parsley.
