🍝🍆Spicy Aubergine & Chick’n Pasta🍆🍝 A spicy baked aubergine, garlic and tomato sauce with vegetarianbutcher ‘what the cluck’ pieces and rigatoni pasta! ➡️ Swipe to add a sprinkle of nutritional yeast 🤗 This was really simple to make: 1. Put chopped garlic, chopped aubergine, vegan chick’n, olive oil, balsamic vinegar, Italian herbs, chilli flakes and a tin of chopped tomatoes in a roasting tin. 2. Bake for 40mins at 180°C. 3. Once the sauce has baked, add in your favourite cooked pasta (with a splash of pasta water) and mix it all together. 4. Top with fresh basil and serve 🍃🌶😋
