🍪💓Vegan S’mores Cookies💓🍪

Gooey & chewy chocolate chip cookies, stuffed with marksandspencer’s new plant kitchen marshmallows!🤤 Topped with dark chocolate chunks and extra marshmallows🍫🤩

👩🏼‍🍳Recipe (makes 14):
115g of vegan butter 🧈
100g of white sugar
100g of brown sugar
1 tsp of vanilla extract
185g of flour
1 tsp of baking soda
1/4 tsp of salt 🧂
1tbsp of plant milk (I used alpro soya) 🥛
70g of vegan dark chocolate 🍫
70g of vegan marshmallows
Preheat your oven to 180°C (fan)
1. Cream the butter with the white and brown sugar. Once fluffy, mix in the vanilla extract.
2. Mix in the flour, baking soda and salt. It will be crumbly.
3. Add the plant milk and mix it all together until a dough is formed.
4. Chop half of the vegan dark chocolate and half of the vegan marshmallows into small chunks, and then incorporate them both into the cookie dough.
5. Cover and refrigerate the cookie dough for an hour- this will control the spread in the oven (I was a bit impatient so mine came out flatter than I would have liked)
6. Take out the fridge and roll into 14 equal sized balls; and then bake for 4 minutes on lined baking trays.
7. Add chunks of the remaining vegan dark chocolate and vegan marshmallows to the top of the part-baked cookies.
8. Allow to bake for another 6 minutes (10 minutes total).
9. Once baked, allow to cool/harden slightly and enjoy!! 😊
