🥦🍲Vegan Thai Green Chicken Curry🍲🥦

A creamy coconut curry loaded with yellow pepper, courgette, green beans, tender-stem broccoli (stalks and all), cavelo nero and vegetarianbutcher ‘what the cluck’ chicken style pieces! 😻 I served the curry with fluffy white rice and a slice of lime 🌱💚.

Meat replacements often get a bad rep nutrition wise due to how processed they can be, but processed does not always equal ‘bad’. The vegetarianbutcher ‘chicken’ is made from soy beans, meaning it is high in protein and contains all 9 of essential amino acids our bodies need. It also contains 6.1g of fibre per serving😃👍🏼, something really beneficial to health that you will not find in real chicken products.

If meaty replacements aren’t for you, you can always swap the ‘chicken’ out for some chickpeas, lentils or tofu 😋
